How to: Mukimo

Today we are making Mukimo.

Mukimo is a delicious potato mash with a bunch of ingredients which can be customized to your liking. Kahurura Mukimo is made of mashed potatoes, soft maize and pumpkin leaves (Kahurura) or spinach. You can always substitute the leafy greens for green peas. Making mukimo is super easy and you only need to follow a few steps.

Preparation; You can choose to steam and blend the pumpkin leaves for a smooth consistency when mashing or boil them together with the potatoes and maize then mash them. I particularly like to steam them so that they do not loose their nutritional value due to long boiling. Steaming also helps to get rid of the raw vegetable taste.

** TIPS**

Greens: You can always substitute the pumpkin leaves with spinach or green peas. This may change the taste slightly.

Potatoes: Do not over boil the potatoes. They may become too soft/watery for mashing giving you a runny mukimo. You need the potatoes cooked and soft. Remember to drain the water into a bowl you might need the soup when mashing @3:18 to achieve the perfect consistency.

Onions: Cook the onions until completely brown (almost like they are burning) to give your Mukimo a nice taste to it.

Mukimo is delicious however way you choose to make it and goes well with practically everything. I served the Mukimo with pan fried chicken which I had marinated in honey, garlic and thyme with a sweet honey and garlic sauce. It goes well with beef stew, chicken ,pork or goat meat stew too.

  • 1 kg of Potatoes
  • 2 large bunches of Pumpkin Leaves (Blended to make approximately 1.5 Cups)
  • 1 large Onion
  • 2 soft Maize combs

Irungu Nyakera Discloses Drama in Waititu’s Transfer to Kamiti

The Chairman of the Kenyatta International Convention Centre (KICC), Irungu Nyakera, has stated that more than six Land Cruisers were used to transport former Kiambu Governor Ferdinand Waititu from Industrial Area Prison to Kamiti Maximum Prison on March 24.

In a statement on Tuesday, March 25, Nyakera claimed that Waititu’s arrest and imprisonment were not about justice but rather politics, asserting that there is fear of his comeback.

“More than six Land Cruisers picked up Waititu from Industrial Area Prison on March 24 and took him to Kamiti Maximum. What he is going through is not justice; it is politics disguised as law. This is fear. Fear of his comeback,” Nyakera said.

He compared Waititu’s situation to that of Jomo Kenyatta, Raila Odinga, Koigi wa Wamwere, and Kenneth Matiba, who were jailed but later made a comeback.

“Jomo Kenyatta, Raila Odinga, Koigi wa Wamwere, Kenneth Matiba were jailed, mocked, written off but history had other plans. This is not Waititu’s end. It’s his awakening,” he added.

On February 13, 2025, Waititu was sentenced to 12 years in prison or a fine of Ksh53.5 million after he was found guilty of the illegal awarding of a tender during his time as Kiambu County boss.

Waititu was arrested and convicted on corruption charges related to a Ksh588 million road tender scandal during his tenure as governor.

He was sentenced to serve five years in jail or pay a fine of Ksh2.5 million. Additionally, the court imposed a mandatory fine of Ksh51 million, with a default penalty of serving another seven years in prison.

On Tuesday, March 18, he filed a fresh application seeking to be released on bond as he continues to serve his jail term after being convicted of graft.

Milimani Anti-Corruption Court Chief Magistrate Thomas Nzioki also directed that Waititu’s wife, Susan Wangare, pay a fine of Ksh500,000 or serve a one-year prison sentence.

The magistrate found Waititu’s conduct not to be forgiven since his acts undermined the tenets of good governance. 

”This case is a typical example of a breach of public trust by the former Governor and the co-accused. The offending acts of the accused persons were deliberate, inexcusable, and undermined the tenants of good governance,” Nzioka stated.

Survey Reveals 6 Major Concerns Over IEBC

The Independent Electoral and Boundaries Commission (IEBC) is still grappling with key issues, even as interviews to select a new chair commenced on Monday, March 24.

A recent survey by Inforak highlighted deep-seated concerns among IEBC stakeholders regarding the commission’s competence in conducting a credible election, particularly as polls have consistently been contested by losing candidates since 2007.

According to the survey, one of the biggest concerns regarding the IEBC was external interference, with 39 per cent of respondents expressing fears that the commission tends to be influenced by powerful forces outside its structure— a factor likely to further erode public confidence.

Another key concern is corruption, as 38 per cent of respondents raised concerns over the mismanagement of resources, procurement scandals, and financial misappropriation.

The issue of graft within IEBC came into play once again after the commission quoted a Ksh61 billion budget estimate for the upcoming 2027 elections. IEBC’s legal director, Crispin Owiye, has since explained that the exorbitant budget was largely because of political tensions and distrust in the country.

Another 38 per cent of respondents pointed to the lack of commissioners as a major gap in the commission’s governance, noting that without a fully constituted commission, election preparations are stalled as fundamental decisions cannot be made.

Furthermore, inadequate funding also emerged as a pressing concern, with 23 per cent of stakeholders highlighting limited financial resources as a potential hindrance to the IEBC’s ability to deploy election materials, train officials, and upgrade technology for more efficient processes.

Elsewhere, 13 per cent of respondents raised concerns about inadequate resources, including insufficient manpower and outdated election equipment, which further complicate service delivery.

Beyond these primary concerns, 3 per cent of stakeholders cited other issues, including a lack of legal clarity on electoral dispute resolution mechanisms.

Despite efforts to refine its operations, the commission continues to grapple with deep-rooted structural and operational issues that cast doubt on its effectiveness.

With the new selection panel racing against time to address some of the issues facing the commission, 11 candidates are set to be interviewed for the IEBC chair position.

The selection panel, led by Nelson Makanda, was scheduled to interview Abdulqadir Lorot Ramadhan, former Chief Registrar of the Judiciary Anne Atieno Amadi, former East African Court of Justice judge Charles Ayako Nyachae, and Edward Katama Ngeywa on Monday.

Candidates including Erastus Edung Ethekon, Francis Kakai Kissinger, Jacob Ngwele Muvengei, and Joy Brenda Masinde-Mdivo are slated for their interviews on Tuesday, March 24.

Anne Amadi Grilled Over Ksh100M Fake Gold Scam During IEBC Chair Interviews

Former Judiciary Chief Registrar Anne Amadi has denied any involvement in the 2023 gold scandal, in which she, her son, and others were sued by a Dubai-based gold trading company. They were accused of obtaining over Ksh 100 million for gold that was never supplied.

Speaking on Monday, March 24, before the Independent Electoral and Boundaries Commission (IEBC) Selection Panel, Amadi said she had no connection to the alleged fraud and the accusations damaged her reputation.

She explained that she resigned from the law firm linked to the scandal in 2014 and was fully focused on her work in the Judiciary at the time.

“There was no reason for me to be named as the first respondent in that case. I had already left the firm and was not involved in its operations. The accusations were a deliberate attack to malign my integrity,” she stated.

Amadi also stated that she had no knowledge or experience in gold trading and was not involved in any gold business.

She pointed out that both the High Court and the Court of Appeal ruled in her favour, proving that she had no role in the scandal.

“It was an attempt to shake me, an attempt to destroy my reputation and integrity. I do not have skills in gold trade, and I had nothing to do with it.”

“The freezing of my accounts was unjustified, and the courts have since vindicated me. This was a clear attempt to taint my reputation due to my track record in public service,” she added.

On May 19, 2023, the High Court froze Amadi’s bank accounts after she was named in the gold fraud case linked to her former law firm. 

The court also extended orders to freeze the assets of her son, who is in charge of running the advocate firms

However, on July 9, 2023, Justice Alfred Mabeya lifted the freeze, ruling that there was no evidence linking her to the Sh102 million gold scam.

He stated that Amadi was not involved in managing the law firm’s daily activities and did not receive or handle the money in question.

How to: Ugali Mboga | Sukumawiki (Collard Greens) + Spinach

Toady we are making Ugali Mboga.

Ugali is the Kenyan version of corn meal and it is consumed in every household. I like having my ugali with local veggies which are collard greens mixed with spinach.

Growing up, my mum used to prepare this often.

I will share how I make sauteed sukumawiki with onions. This method is borrowed from my mum. She doesn`t like tomatoes in her veggies due to acidy so I grew fond of having my veggies the same way as her. The recipe is super simple and I often serve this as a side dish to a main meal like beef stew.

Let`s begin.

Serves 2-3 Decent Portions

INGREDIENTS

  • 1 big bunch of Sukumawiki/Collard Greens
  • 1 big bunch of Spinach
  • 1 large onion
  • Enough cooking oil for sautéing
  • 1/4 Tsp Salt
  • Beef Cube (Optional)

METHOD

**TIP**

Saute/cook the onions to a golden brown colour. Make sure not to burn it. The browning of the onions will add a nice flavour to the veggies.

I don`t really like the taste of beef/chicken cubes but if you do please feel free to add it.
